The pastry chefs of the Covered Market, bearers of a rolling pin and wisdom, will teach you how to prepare the real Romagna cappelletto.
Cappelletti are, for Romagna, a dish loaded with a symbolism of well-being, wealth and opulence. In the past, wishing "cappelletti on the table and for the whole year" was in fact one of the most heartfelt and welcome wishes. Participants will be provided with a kit with all the tools of the trade (chopping board, rolling pin, wheel for cutting the dough), Molino Spadoni Gran Mugnaio flour, local eggs, water and everything needed to roll out the dough.
The dough will be prepared in advance and provided to the participants by the pastry chef herself, who will explain and show, step by step, the method of preparation at her workstation.
The "sfogline" will also teach all the participants to prepare the filling with traditional ingredients and will reveal all their secrets and the technique used to close the cappelletti "in the Romagna way". At the end of the workshop, the participants will be able to bring the freshly prepared pasta with them.
