*The “sfoglina” (pasta maker) is historically seen as a middle-aged woman who, using a rolling pin and a pastry board, "rolls the dough" strictly by hand to create the base for tagliatelle, tortellini and other stuffed and unstuffed egg pasta.
Cappelletti are, for Romagna, a dish charged with a symbolism of well-being, wealth and opulence. In the past, wishing "cappelletti on the table and throughout the year", was in fact one of the most heartfelt and appreciated wishes.Thursday at 3.30 pm

Participants will be provided with a kit with all the tools of the trade (chopping board, rolling pin, pasta cutter), Molino Spadoni Gran Mugnaio flour, local eggs, water and everything needed to make the dough. The dough will be previously prepared and provided to participants by the “sfoglina” herself, who will explain and show in her workstation, step by step, the method of preparation.
The “sfogline” will also teach all participants how to prepare the filling with traditional ingredients and will reveal all their secrets and the technique used to close the cappelletti "in the Romagna way".
At the end of the workshop, participants will be able to take their freshly prepared pasta with them.
